Hubby and I had friends (Jeni and Mark) over for dinner Saturday evening, mainly because Jeni is almost 38 weeks pregnant and about to pop and we wanted to see them before the baby arrives. We humorously called it the last supper.
Nothing too fancy, hubby worked diligently on a monstrous veggie lasagna while I cleaned house and chopped veggies and made a caesar salad.
The lasagna was stuffed with seasoned ricotta cheese, mozzarella, hubby's homemade tomato sauce, leeks, squash, zucchini, mushrooms, and spinach. It was divine, and I have been enjoying leftovers for lunch daily since then.
For dessert we let the pregnant lady decide what she wanted. All she had to do was mention the word "molten" and I was right on track. She had sent me a copy of a recipe for Molten Lava Cakes from the "Our Best Bites" blog a week earlier. It was now time to put it to the test.
After dinner while the husbands sat around the table drinking beer, us ladies reentered the kitchen to prepare the Molten Lava Cakes. Preparation time was maybe 10 minutes and cooking time was about 14 minutes. Letting the cakes cool for 10 whole minutes before eating was the hardest part. But way worth it!
